Water Chestnut Cake: A Traditional Cantonese Delicacy

Water chestnut cake is a classic Cantonese snack. With its pleasantly chewy texture, fragrant softness, and subtle sweetness, it is suitable for consumption throughout all four seasons.

Recipe:


– 250g Pondside water chestnut powder


– 1000g water


– 300g slab sugar and brown sugar


– 200g water chestnuts (peeled and diced)


– 1 non-stick square mold (8-inch)



Instructions:


Prepare the ingredients: brown sugar, water chestnut powder, and peeled water chestnuts cut into small pieces.


Add half the water (500g) to a pot with slab sugar.


Incorporate brown sugar and diced water chestnuts, heating until the sugar dissolves completely.


Mix the remaining water (500g) with water chestnut powder to form a smooth, lump-free batter.


Slowly pour the batter into the boiling sugar water while stirring continuously with a spoon.


Cook until the mixture thickens into a paste, then turn off the heat.


Pour the paste into the non-stick mold, spreading it evenly, and steam over boiling water for 20 minutes.


Allow to cool before removing from the mold and cutting into pieces.


The result is a fragrant, soft, and delightfully chewy cake made with white sugar and a small amount of brown sugar, creating an irresistible treat.
