Southern Fujian Sweet Potato Cake

This traditional Southern Fujian snack remains a source of pride for Quanzhou locals. While modern times offer greater material abundance, the authentic essence of this delicacy persists with unwavering quality.


Ingredients:


– Sweet potato: 1 piece (approx. 250g)


– Fine sugar: 30g


– Glutinous rice flour: 100g


– Water: 80g



Preparation:


1. Peel and cube sweet potato, then boil until tender


2. Mash thoroughly in a bowl using a stainless steel spoon


3. Incorporate fine sugar until fully blended


4. Combine glutinous rice flour with water to form a dough, resting for 15 minutes


5. Shape dough into elongated form and divide into 12 date-sized portions


6. Pan-fry in 100g oil at 100°C until golden brown
