Jiangnan Snack: Spiced Duck
Ingredients: Duck, Sichuan peppercorns, Salt, Star anise, Ginger, Cooking wine, Scallions, Fennel, Sichuan pepper salt (a blend of toasted Sichuan peppercorns, salt, fennel, and bay leaves ground into powder), Dried tangerine peel, Bay leaves, Thirteen-spice powder.
Preparation:
1. Evenly rub duck legs with the toasted Sichuan pepper salt mixture and marinate overnight.
2. Place the rinsed marinated duck legs in a pot, adding Sichuan peppercorns, scallions, ginger, Huadiao wine, star anise, and dried tangerine peel.
3. Bring to a boil over high heat, then reduce to low and simmer for 40 minutes.
4. Allow the duck to cool in the broth.
5. Once cooled, swiftly chop into pieces with a sharp knife.
